While many of our ingredients are certified organic, not all of our small farmers have the resources to obtain organic certification (it’s expensive + time-consuming!). In fact, a lot of our farmers abide by organic practices, even if they haven’t gone through formal certification. For this reason, we vet our sources + personally visit each to understand their practices before choosing to serve their produce. In this way, we can serve the highest quality ingredients while supporting smaller farms.
We have a very intricate family of farmer partnerships across our market, sourcing the freshest ingredients regionally + locally. Each of our farmers have developed a specific set of standards to farm each ingredient in the most sustainable and thoughtful way possible. That said, if you check out our menu, you'll see "organic" in front of any ingredient that is formally certified.
